Homemade gifts for the holidays: Erewhon Crispy Brown Rice Treat Pops

Cake pops are all the rage these days, probably because they’re so adorable. So for the holidays I’ve created Crispy Treat Pops using Erewhon Crispy Brown Rice – Gluten Free Cereal for those who are gluten free and can’t have regular cake pops.

These are easy enough to make with the kids, to get them involved in making gifts for grandma or their teacher.

Erewhon Crispy Brown Rice Treat Pops

Ingredients:

  • Cooking spray
  • 7 cups Erewhon Crispy Brown Rice cereal
  • 1/4 cup butter
  • 6 cups mini marshmallows
  • 1 24-ounce package almond bark
  • Decorating items: sprinkles, shredded coconut, nonpareils, jimmies, mini chocolate chips, etc. – enough to decorate 24 pops
  • 24 lollipop sticks

Directions:

Lightly coat a large bowl with cooking spray.

Pour Erewhon Crispy Brown Rice cereal into the bowl and set aside.

Melt butter in a large saucepan over medium heat.

Add the mini marshmallows and continue to cook until they’re melted. Make sure to stir often so the marshmallows and butter don’t burn.

Remove from heat and pour marshmallow mixture on top of the Erewhon cereal. Stir to combine. (If needed, use your hands to gently combine the mixture. Make sure to coat your hands with cooking spray first.)

Coat your hands with cooking spray so the treats don’t stick to your hands. Form the cereal and marshmallow mixture into 24 (2-inch) balls. Put aside for 30 minutes until the balls harden. (You can put the balls in the freezer for 15 minutes to speed up the process.)

Melt the almond bark according to package directions.

Dip treat balls into the almond bark to coat completely. Shake off excess.

Roll ball in sprinkles, shredded coconut, etc. before almond bark hardens.

Place coated and decorated balls on a wax paper or silicone baking mat. Let almond bark harden.

Remove extra bark and decorations from the bottom of your ball. (The side that was on the mat or waxed paper.)

Gently stick the lollipop stick into the bottom of your ball being careful not to push it all the way through. (Using a twisting motion helps.)

 

Gifting ideas:

  • Place a few pops in a clear cellophane treat bag and tie with a pretty ribbon.
  • Put your Erewhon Brown Rice Crispy Treat Pops in a tall mug or glass filled with coffee beans. (You can trim the lollipop sticks to fit your container.)

Erewhon Crispy Brown Rice Meatloaf (Gluten Free)

I love meatloaf, but haven’t had the best of luck with it. My meatloaf always turns out delicious, but falls apart when sliced. So very frustrating! Then I learned the secret of perfect meatloaf from a Denver area chef – you must add milk to it. Milk, really?

Well, it worked. In fact, this was the best meatloaf I’ve ever cooked! It was made even better by using Erewhon Crispy Brown Rice Gluten Free Cereal.  Instead of making your own bread crumbs from gluten free bread, make it easier on yourself by pouring a couple of cups of Erewhon Crispy Brown Rice cereal from the box.

Milk and cereal? You could almost call it a breakfast meatloaf!

Erewhon Crispy Brown Rice Meatloaf (Gluten Free)

Ingredients:

  • 1 egg
  • 3/4 cup skim milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 1/3 cup finely chopped onion
  • 2 cups Erewhon Crispy Brown Rice- Gluten Free Cereal
  • 1 1/2 pounds lean ground beef, turkey or venison
  • cooking spray

Directions:

  1. Preheat oven to 350 degrees F.
  2. Place all ingredients into a large bowl. Mix all ingredients with your hands until combined.
  3. Spray meatloaf pan with cooking spray. Place meat mixture into pan. Place pan on a cookie sheet and place in oven.
  4. Bake at 350° about 1 hour or until well browned and center is cooked (170 degrees F).
  5. Turn off oven and let sit in oven 10 minutes before slicing.

Healthifying a Decadent Treat: Cranberry & Cherry Crunch Bark

Before you know it, the holidays will be here along with all those not-so-good-for-you treats. So many of our holiday memories are tied to food, so indulge if you must, but find ways to health things up. One of my favorite ways to do that is to take unhealthy treats and add good stuff to them like nuts and dried fruits.

That’s why I love making chocolate bark candy – by adding some healthy goodness, you don’t feel too guilty about enjoying the chocolate. It’s also a great treat if you’re gluten free or need to avoid nuts. Just use a gluten free cereal like Erewhon Crispy Brown Rice and just dried fruit, like I’ve done below.

Cranberry & Cherry Crunch Bark

Ingredients:

You will also need:

  • a large cookie sheet or jelly roll pan
  • parchment paper

Directions:

  1. Place a large cookie sheet in your freezer until well chilled – one to two hours.
  2. In a large bowl, mix cereal, dried cherries and 1/4 cup dried cranberries together.
  3. Melt candy coating (bark) according to directions.
  4. Stir melted chocolate into the cereal and dried fruit mixture.
  5. Spread mixture onto the cold, parchment lined baking sheet. (Use the pack of a spatula or an offset spatula to spread the mixture.)
  6. Once spread, sprinkle on remaining cranberries and gently press into the surface.
  7. Cover with parchment and place into freezer until solid – 30 to 60 minutes.
  8. Break into pieces and serve.

Variations:

  • Instead of chocolate candy coating, try vanilla.
  • Substitute other dried fruits and nuts for the dried cherries and cranberries.
  • Instead of sprinkling cranberries on top, tried shredded, unsweetened coconut.

Tips:

  • You can find “bark chocolate” (candy coating) in the baking section of your grocery store.
  • Treats like Crunch Bark make a nice gift. Place pieces in a decorative jar or box or put in a cellophane bag tied with a ribbon. It’s great for cookie exchanges, too!
