Homemade Gift Idea: Muffin Mix!

Need a simple and inexpensive gift idea that your family, friends, and coworkers will love? One of my favorite homemade gifts is a baking mix! Simply measure out the dry ingredients for your recipe, put them into a jar or bag, add a bow and attach some baking instructions, and voila! A cute and homemade gift.

Remember my delicious Whole Wheat Peanut Butter & Jelly Cereal Muffins? Here’s how to make them into a homemade muffin mix gift.

Step 1: Prepare Your Package/Jar

Layer the following in a jar or bag (if you use a paper bag as seen above, put the ingredients in a ziplock so it’s airtight): 2 cups Erewhon Rice Twice cereal, 1 & ½ cup whole wheat pastry flour, ½ cup sugar, 1 teaspoon baking powder, ½ teaspoon baking soda.

 

Step 2: Prepare Your Label/Instructions

Here are the instructions to print (or hand write) and place on package for recipient:

Whole Wheat Peanut Butter & Jelly Cereal Muffins

Preheat oven to 350.

Additional ingredients needed: 1 cup skim/lowfat milk, 1/3 cup peanut butter, 1 Tablespoon olive oil, 1 teaspoon vanilla extract, 1 egg, 12 teaspoons jam (any flavor).

1) Place dry ingredients from package into a large bowl. In a separate bowl, mix wet ingredients, except for jelly.

2) Add wet ingredients to dry, mixing lightly until uniform.

3) In a cooking sprayed or greased muffin tin, fill each cup about half way with batter. Place a teaspoon of jam in each cup, then cover it with the second half of the batter.

4) Bake 20 minutes; fork check to make sure they are done. Enjoy!

GIFT PACKAGING

The beauty of this gift idea is that you can use it for virtually any baked good recipe – for example, homemade cookies or brownies in a jar are also popular. Another idea is to make a huge batch of homemade granola (this recipe looks yummy!) to give out in jars to your friends. The sky is the limit!

Corn Flake Encrusted Chicken Fingers Recipe (Gluten Free)

Corn Flake Encrusted Chicken Fingers with Erewhon Corn Flakes

I love chicken fingers, but I don’t love the fact that they are almost always fried. These chicken fingers are the perfect compromise – the corn flakes make them super crunchy even though they are baked, and the spices add delicious flavor.

Gluten Free Corn Flake Crusted Chicken Recipe

Corn Flake Encrusted Chicken Fingers (Gluten Free)

(makes ~3 to 4 servings)

Just like the chicken fingers from your favorite diner… minus the grease.

Ingredients:

  • 1 package chicken tenders (mine was ~1.25 lbs)
  • 2 eggs, beaten
  • 1 Tbsp. dijon mustard
  • 2 C Erewhon Corn Flakes, finely crushed
  • 1/4 tsp. each of: salt, pepper, paprika, garlic powder, chili powder

Instructions:

Preheat oven to 375.

1) In a small bowl, combine the egg and mustard. On a plate, mix the crushed corn flakes and spices.

2) One by one, dredge the chicken tenders in the egg/mustard mixture, then in the corn flake mixture until fully coated. Place the coated tenders on a cooking sprayed or nonstick baking sheet. You may need more than one – I used two baking sheets!

3) Bake at 375 for 12 to 15 minutes, or until golden brown.

Enjoy!

These are great for lunch with a side salad, as you see below, or try them for dinner with some roasted sweet potatoes and broccoli. Delish! And don’t forget the (organic) ketchup. ;)

5 Reasons why I love the Healthy Living Summit

Healthy Living Summit 2011

Over the weekend of August 19th, I was lucky enough to attend the 3rd annual Healthy Living Summit in Philadelphia on behalf of Attune Foods. I had a wonderful time seeing good friends, meeting new ones, and helping to promote Attune by sharing product details and handing out samples at their booth with Annelies!

Here are 5 reasons why I love the Healthy Living Summit:

1) The original Healthy Living Summit in August 2009 was the very first blogging conference I ever attended – before I even started my blog! I’ve been to all 3 years of the conference – in August 2009 in Boston, August 2010 in Chicago, and this year in Philadelphia. I started my blog (fANNEtastic food) in October of 2009, shortly after returning from the first summit. I’d been thinking about starting a blog for awhile, and being there and meeting all the other bloggers was such motivation for me to finally go ahead and start my own!

2) There’s always someone to go running with. This year, there was an organized 5k run/walk on Sunday morning, but two HUGE groups of conference attendees made plans to run on Saturday morning, too. Since so many people are training for marathons, a super long run group went out at 5 a.m., and I met up with a group at 6 a.m. that wanted to run about 5 miles. Perfect!

3) It’s easy to find healthy food. At most normal conferences, the food is usually pretty gross and it’s hard to find healthy options without a big hassle. Not so at this conference! Instead of the usual sugary muffin and pastry “continental” breakfast, we got an amazing spread of Attune cereals, berries, and milk or yogurt!

4) It’s informative. I learned how to write a better recipe from Stepfanie of Spark People, how to combat negativity in the blog world from a panel of bloggers, how to monetize my blog without selling out from social media superstar Katy Widrick, and much, much more.

5) It’s FUN! Any conference that has a photo booth at their cocktail party gets my vote!
