Homemade Gift Idea: Muffin Mix!

Need a simple and inexpensive gift idea that your family, friends, and coworkers will love? One of my favorite homemade gifts is a baking mix! Simply measure out the dry ingredients for your recipe, put them into a jar or bag, add a bow and attach some baking instructions, and voila! A cute and homemade gift.

Remember my delicious Whole Wheat Peanut Butter & Jelly Cereal Muffins? Here’s how to make them into a homemade muffin mix gift.

Step 1: Prepare Your Package/Jar

Layer the following in a jar or bag (if you use a paper bag as seen above, put the ingredients in a ziplock so it’s airtight): 2 cups Erewhon Rice Twice cereal, 1 & ½ cup whole wheat pastry flour, ½ cup sugar, 1 teaspoon baking powder, ½ teaspoon baking soda.

 

Step 2: Prepare Your Label/Instructions

Here are the instructions to print (or hand write) and place on package for recipient:

Whole Wheat Peanut Butter & Jelly Cereal Muffins

Preheat oven to 350.

Additional ingredients needed: 1 cup skim/lowfat milk, 1/3 cup peanut butter, 1 Tablespoon olive oil, 1 teaspoon vanilla extract, 1 egg, 12 teaspoons jam (any flavor).

1) Place dry ingredients from package into a large bowl. In a separate bowl, mix wet ingredients, except for jelly.

2) Add wet ingredients to dry, mixing lightly until uniform.

3) In a cooking sprayed or greased muffin tin, fill each cup about half way with batter. Place a teaspoon of jam in each cup, then cover it with the second half of the batter.

4) Bake 20 minutes; fork check to make sure they are done. Enjoy!

GIFT PACKAGING

The beauty of this gift idea is that you can use it for virtually any baked good recipe – for example, homemade cookies or brownies in a jar are also popular. Another idea is to make a huge batch of homemade granola (this recipe looks yummy!) to give out in jars to your friends. The sky is the limit!

Corn Flake Encrusted Chicken Fingers Recipe (Gluten Free)

Corn Flake Encrusted Chicken Fingers with Erewhon Corn Flakes

I love chicken fingers, but I don’t love the fact that they are almost always fried. These chicken fingers are the perfect compromise – the corn flakes make them super crunchy even though they are baked, and the spices add delicious flavor.

Gluten Free Corn Flake Crusted Chicken Recipe

Corn Flake Encrusted Chicken Fingers (Gluten Free)

(makes ~3 to 4 servings)

Just like the chicken fingers from your favorite diner… minus the grease.

Ingredients:

  • 1 package chicken tenders (mine was ~1.25 lbs)
  • 2 eggs, beaten
  • 1 Tbsp. dijon mustard
  • 2 C Erewhon Corn Flakes, finely crushed
  • 1/4 tsp. each of: salt, pepper, paprika, garlic powder, chili powder

Instructions:

Preheat oven to 375.

1) In a small bowl, combine the egg and mustard. On a plate, mix the crushed corn flakes and spices.

2) One by one, dredge the chicken tenders in the egg/mustard mixture, then in the corn flake mixture until fully coated. Place the coated tenders on a cooking sprayed or nonstick baking sheet. You may need more than one – I used two baking sheets!

3) Bake at 375 for 12 to 15 minutes, or until golden brown.

Enjoy!

These are great for lunch with a side salad, as you see below, or try them for dinner with some roasted sweet potatoes and broccoli. Delish! And don’t forget the (organic) ketchup. ;)

Whole Wheat Peanut Butter & Jelly Cereal Muffins

Have you guys heard about the Attune recipe contest yet? This month, for October, the challenge is to create a “treat” recipe using one of the cereals listed on the contest page. I’m one of the judges and I can’t wait to see what you all come up with! The October Cooking Challenge is accepting recipes until Thursday, so turn yours in today. In honor of the contest this month, I thought it would be fun to create my own treat recipe using an Attune Foods cereal.

I used Erewhon Rice Twice cereal to create some delicious Whole Wheat Peanut Butter & Jelly Muffins for a brunch party I hosted a couple weeks ago. They came out just as yummy as I’d hoped – a rich peanut buttery flavor with a burst of jam when you bite into them. Perfect.

Whole Wheat Peanut Butter & Jelly Cereal Muffins

Makes a dozen muffins

 

Ingredients:

§               2 cups Erewhon Rice Twice cereal

§               1 & ½ cup whole wheat pastry flour

§               ½ cup sugar

§               1 teaspoon baking powder

§               ½ tsp baking soda

§               1 cup skim/lowfat milk (or dairy free substitute)

§               1/3 cup peanut butter

§               1 Tablespoon olive oil

§               1 teaspoon vanilla extract

§               1 egg

§               12 teaspoons jam (any flavor – I used strawberry)

 

Instructions:

1)       Preheat oven to 350.

2)       In a large bowl, mix dry ingredients (cereal, flour, sugar, baking powder & soda). In a separate bowl, mix wet ingredients, except for jelly.

3)       Add wet ingredients to dry, mixing lightly until uniform.

4)       In a cooking sprayed or greased muffin tin, fill each cup about half way with batter. Place a teaspoon of jam in each cup, then cover the jelly with the second half of the batter.

5)       Bake 20 minutes; fork check to make sure they are done.

This recipe was a big hit at my brunch party – and the leftovers were perfect for early a.m. pre-workout snacks, and afternoon snacks, too! I’ll definitely be putting this recipe on the list to make again very soon.
